We start by making a cinnamon honey paste, that we freeze and then cut into little 1/4 cubes to knead into the scone dough at just the right time. Then, as soon as the scones are the perfect golden color, we pull them from the oven and glaze them with a little wild clover honey and ghee while they're hot. As they cool, the flavor deepens.
