“Hi, my name is Terra. I decided to make my own sourdough starter (Gertrude is her name) 4 years ago after finding out I had a gluten sensitivity. Slowly, I started swapping out every store bought bread item in my home with sourdough, and my body was much happier because of it. I learned that I didn’t have to give up bread, and there’s nothing that made me more happy than that! I quickly fell in love with baking sourdough, the process of it all, how much it challenged me and the creative outlet it gave me. I decided to leave my job of 20 years in the dental field to bake full-time after doing it as a “side hustle” for a while, and it was the best decision I’ve ever made. Being able to provide healthier bread to people while pursuing my passion AND career is the literally the coolest thing ever, and I couldn’t be more grateful for this new life! * About Our Bread: All of The Doughoe breads are made with our very own custom blend of locally grown, stone-milled *heritage* grains from Hayden Flour Mills. It’s a blend unique to The Doughoe that was created after almost 6 months of testing countless flours and combinations to create the perfectly flavored, most nutrient dense, locally sourced bread for you. I wanted something that honored AZ’s heritage (White Sonoran Wheat) while giving a nod to the origin of where it all started (Rouge De Bordeaux Wheat). These grains are non-GMO, unbleached and untreated, grown organically, without chemicals, and do not contain any glyphosate or folic acid. There are no preservatives, and our bread is ONLY made with flour, water and salt (unless it’s a flavored loaf, of course). We take it one step further by performing a 36+ hour cold fermentation on all our loaves before baking them. This extra long cold fermentation process is what helps break down the gluten and phytic acid, making the bread more easily digestible and the nutrients more bioavailable to your body. I chose to do this because it’s what I do for myself, and I want you to be able to enjoy the exact same benefits I do from this bread. It may be an extra step, but trust me, it’s SO worth it, and your body will thank you for it. All of the loaves then get steam baked to a golden perfection in a Dutch Oven. All of our other products are also made with organic flour, eggs, sugar, and we use as many organic and locally sourced items (when available) to bring you the highest quality baked goods possible.
