“Gâteaux etc is a registered, sole proprietor, home bakery business, located on beautiful Burnaby Mountain. A largely self-taught, life long baker, I've recently also trained at the San Francisco Baking Institute & Rise Baking Lab (Chilliwack), and hold a valid Food Safe Certification. The primary focus for Gâteaux etc is organic sourdough loaves , sourdough focaccia and a variety of recipes made with sourdough starter. After a great experience baking cakes, cookies & bars to sell at community markets, the focus for Gâteaux etc has shifted to direct sales of all things sourdough!! Seasonal non-sourdough baked goods are still occasionally available for custom orders. The slow fermentation process required when baking with wild yeast, creates healthier and more easily digested baked goods, compared to those made with only commercial yeast. Gâteaux etc uses a variety of BC flour, selecting the best combination based on required fermentation & hydration for each recipe. Roger's Organic All Purpose Flour, Roger's Whistler high protein flour and a variety of Anita's Organic flours are used in our kitchen. Locally sourced fresh herbs & ingredients are incorporated whenever possible.”
