My sourdough is NOT sour, it is crunchy on the outside and pillow of buttery goodness on the inside. We use a 16+ hour long cold fermentation to let the gluten brake down and build back up making it easier to digest. Our flour is a hardy mix of organic dark northern spring wheat and organic hard red winter wheat grown in the Pacific Northwest. This strong flour mix has had a superior performance in sourdough breads. NO yeast here. Why? Sourdough develops gluten so our bodies can digest it easily. Making it low on the glycemic index, and keeps you fuller longer. Yeast does not do this. Sourdough is the oldest form of yeast for leavening bread, it just takes longer. Three days to be exact! *No Refunds or Re Bakes * As a small bakery we wouldn't be able to sustain if orders are fulfilled and not claimed, requesting refunds. It takes three days to make one sourdough loaf. If you cannot pick up your order, please gift it to a friend! After 24 hours of no pick up, your order will be donated.”
